Most of the confusion around gelatin comes from people who oversell it — and from people who dismiss it for the wrong reason.

"Eating collagen rebuilds the collagen in your joints."

What's accurate

Digestion breaks gelatin down into amino acids and small peptides; it is not routed to a specific joint. What gelatin genuinely provides is a concentrated supply of glycine, proline and hydroxyproline — amino acids your body uses to build its own connective tissue. That's a raw-materials argument, not a repair claim.

"Gelatin is just empty protein — it does nothing."

What's accurate

Gelatin is an incomplete protein: it is very low in tryptophan, so it can't be your only protein source. But glycine is the single most abundant amino acid in collagen and is not abundant in muscle meat, which is what most modern diets are built from. It fills a gap rather than replacing a steak.

"Equine gelatin is something new and exotic."

What's accurate

Gelatin has been made from animal hides and bones for centuries, and the source animal varies by region and industry. Equine is simply one of those sources, used where bovine or porcine is unsuitable. The manufacturing process is the same one behind the dessert box in any supermarket.

What equine gelatin is

Gelatin is collagen that has been partially broken down by heat and water until it dissolves. Equine gelatin simply names the source animal — horse hide and bone — rather than the cattle, pig or fish used elsewhere. The chemistry and the manufacturing are the same.

What ends up in the box is a near-flavourless protein powder, roughly 85–90% protein by weight, unusually rich in glycine and proline and containing no sugar, fat or fibre. It sets liquids as it cools, which is why the glass on the table looks the way it does.

Why it's worth a paragraph

The interesting point isn't that gelatin is powerful. It's that a common component of the traditional diet became rare almost by accident, and that the amino acids it supplies are the ones muscle-meat-heavy modern eating is thinnest in. Both start as collagen. Gelatin is partially broken down and gels when it cools. Collagen peptides are broken down further, dissolve in cold liquid and don't gel. Nutritionally they're very close; the practical difference is texture and what you want to make with it.

Why equine rather than bovine or porcine?

It's a sourcing decision, not a quality claim. Equine gelatin is used where bovine or porcine sources are unsuitable for dietary, religious or supply reasons. Whatever the source, the honest thing for a label to do is state it plainly — which is why the warning section above puts unstated sourcing near the top.

Does cooking or hot coffee destroy it?

No. Gelatin is produced with heat in the first place, and amino acids survive normal kitchen temperatures. Very prolonged boiling weakens the gelling strength, so it may not set as firmly — the protein content is unaffected.
